A new white wine made from grapes of our vineyards that most suffer from the rabbits. They appreciate the high quality of the fruit just as much as we do. Unfortunately they are often faster leaving us with very low yields.
Grape varieties: Malvar and Airén
Vineyards: Ecological vineyard.
Lime soils at 750 meter above sea level.
Continental climate.
Harvest: manual harvest at the end of September
Natural fermentation in amphorae of whole bunches with indigenous yeasts.
No fining. No filtration. Minimum Sulfer.
TASTING NOTE: Colour: light amber Nose : ripe yellow stone fruit mixed with aromas of walnut, dried herbs and minerals.
Taste : medium body with a hint of creaminess, balanced acid and good mouth feel. Flavors of quince, dried apricot and melon are mixed with wild herbs and minerals. Pleasant medium long finish.
Serving suggestion: 14-16 º C Pair with crispy pork belly, chorizo dishes, grilled fish and meats.
